Good morning! Today I’ll be running in the first race of the Goofy Challenge, the half marathon! Today I’d like to introduce you to my friend Nicole from Apple and Arteries!

Why did you start blogging?: I started blogging a year ago because I’d been reading numerous fitness/health blogs for years and wanted to jump into the network. I appreciate having a little slice of the Internet to post recipes, workouts, health news, and pictures of my Labrador Kostas!
What was your biggest fitness accomplishment in 2012? I think my biggest accomplishment was getting back on track with diet and exercise–mainly making sure I stuck to a strength-training program.September 2011-March 2012 I followed a mainly Vegan diet. It was tough for me and just didn’t work for me. I put on about 10 lbs. So in March I went back to a plant-strong diet, incorporating lean meats back into my diet. The 10+ lbs are gone and I’ve toned up. And, in December I was featured on Shape.com as a Fit Chick!
What are your fitness goals in 2013? My main goal is to get out of my comfort zone. I’d like to try TRX and I’ve started looking into becoming a group fitness instructor.

Interesting how everyone has a different experience with vegan diets (or any diet plans)– some people lose weight and some gain….just makes me realize that we really do have to listen to our own bodies to figure out what’s right for us individually (instead of listening to what works for others!)
